It is made inside Hangar 17 at Launceston Airport, the oldest surviving aviation building in Tasmania, a 1932 hangar that sat derelict for thirteen years until Chris Condon restored it and ran his first spirit through the stills in 2015, the first new distillery Launceston had seen in 175 years.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe character of this whisky starts with the stills; both the wash and spirit stills were designed to feature a reflux ball, a deliberate move that keeps the spirit light, fruity and floral. A long seven-day fermentation lifts it further, and full maturation in 100L American oak bourbon casks, with no finishing and no second barrel, lets that bright spirit lead rather than the oak.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe result is a bright, elegant single malt.
