Mead casks almost never turn up in Australian whisky, and they are the reason this release boasts a honeyed sweetness and a delicate thread of spice running right through the malt.
The distillery sits in a restored winery in Hindmarsh Valley on the Fleurieu Peninsula, and takes its name from the dry stone walls that have stood across Europe for centuries, built by hand and built to last.
Head Distiller Brad Rehn spent months on this whisky, tasting blind across spirit matured in rare South Australian mead, ex-bourbon and red wine casks, and adjusting the proportions until every cask had earned its place.
Vanilla and gentle oak arrive first, then cinnamon, nutmeg and a soft custard richness. The palate is buttery and full-bodied, with a bakery character close to Danish pastry fresh from the oven and a firm grip of tannin holding it together. It finishes long, on baking spice and gentle oak.
This whisky was made once, for Barrel Lane members, and the only shelves it will ever sit on are theirs.
