Matured in 60-year-old Pedro Ximénez and Oloroso sherry casks from Jerez, alongside French oak Apera barrels from NSW, it’s a rich, indulgent single malt layered with raisin, caramel, poached pear and dark chocolate. Created by Rod Berry and Phil Townsend – two of Australia’s most respected distillers – this is sherry cask whisky at its finest: bold, refined and deeply satisfying. A slow-crafted, limited release from one of Australia’s most awarded distilleries.
