Tasmanian whisky has always flirted with rebellion. In the 1830s, the island was dotted with legal and illegal stills. Until Lady Jane Franklin. Unimpressed by the excess, she convinced her husband to outlaw distilling altogether.
Her verdict was clear: better barley fed to pigs than turned into men behaving like them. And just like that, Tasmanian whisky went dark for more than 150 years.

The revival came in the early 1990s, sparked by one deceptively simple question from a Hobart surveyor named Bill Lark: Why isn’t anyone making whisky in Tasmania? In 1992, he overturned the prohibition and reignited an industry.
International awards followed, with distilleries like Sullivans Cove, Lark, and Hellyers Road cementing Tasmania’s global reputation.
