About This Release

Hunter Island Distillery in Hobart stands alone as Australia’s only distillery dedicated exclusively to triple-distilled pot still whisky. Founded by Damian and Madeleine Mackey, the distillery revives a nearly forgotten style with a traditional mash bill of 65% malted barley, 30% unmalted barley and 5% oats.

Matured in a careful balance of European oak port and tawny casks alongside American oak ex-Bourbon barrels, this release is layered and expressive. From plummy fruit and gingerbread spice to fennel and creaming soda, it carries a creamy, viscous texture that speaks directly to its pot still origins. A bold yet refined Tasmanian interpretation of a whisky tradition rarely seen outside Ireland.

Tasting Notes

  • Nose: Creaming soda, vanilla pods and freshly grated nutmeg, with lemon peel brightness and subtle oak, lifted by a touch of red fruit.
  • Palate: Plummy fruits and buttery gingerbread, balanced with fennel, cracked black pepper and a hint of red liquorice, deepening into sweet tobacco.
  • Finish: Long and slightly dry, with lingering baking spice and a coating, creamy mouthfeel.
